No-Bake Berry Icebox Cake
This cool, creamy dessert is as easy as it is delicious – no oven required!
INGREDIENTS:
- 1 Box of graham crackers
- Prepared whipped cream - 2 cups heavy whipping cream, 1/2 cup powdered sugar, 1 tsp vanilla (whipped to stiff peaks)
- 1 package instant vanilla pudding (prepared and set aside)
- 2 cups sliced fresh strawberries

INSTRUCTIONS:
- Prepare a 9x13-inch baking dish with a thin layer of whipped cream spread on the bottom.
- Layer graham crackers over the cream, breaking pieces to fit as needed.
- Spread some of the vanilla pudding evenly over the crackers.
- Arrange a layer of sliced strawberries, and then top with a layer of whipped cream.
- Repeat: Graham crackers, pudding, strawberries, and whipped cream (reserving some cream for the top).
- Finish with a layer of whipped cream and berries (sliced side down on top)
- Chill overnight or for at least 6 hours to let the layers soften and meld.
Slice and enjoy pure summertime bliss – cold, creamy, and ready to impress.
